Overview

Begin training for a career as a cook or a chef while you complete your secondary school studies with the Certificate II in Cookery SIT20421.

Delivered exclusively through our VET in Schools program, this introductory cooking course equips you with basic knowledge and skills to work in an assisting roles in the kitchen, or progress to a cookery course.

You'll learn how to:

  • safely use commercial kitchen equipment
  • work effectively and professionally as a kitchen team member
  • prepare, plate and present dishes under supervision
  • keep areas clean and work hygienically to prevent food-borne illness
  • respond to customers' special requests.

Within the cooking course, you will be able to choose subject (unit) where you learn to make cakes and other baked goods, or focus on salads and main courses.

Careers

You'll finish the Certificate II in Cookery ready to apply for kitchen and food preparation jobs that don't need fully qualified cooks.

You could find work in cafes, kiosks, canteens and cafeterias, in roles such as:

  • breakfast cook
  • catering assistant
  • fastfood cook
  • sandwich hand
  • takeaway cook.

You will also be prepared for the next level of study at Victoria University to become a professional chef or cook.

Course structure

To be awarded the SIT20421 Certificate II in Cookery, a total of thirteen (13) units of competency must be achieved, comprising of:
* seven (7) core units, and;
* six (6) elective units, of which:

-
four (4) units must be from Group A, Group B or Group C; and
- two (2) units from Group A, Group B, Group C or Group D.

VCE VM and VET Delivered to Secondary Schools (VDSS)

This an approved VCAA program sequenced over 2 years comprising of:

Year 1: Units 1 & 2

Year 2: Units 3 & 4

VU Polytechnic delivers the electives listed in the ‘course structure and units’ below. These electives have been selected based on industry needs, graduate pathways and/or student and teacher feedback. Alternative suitable electives are only available via Recognition of Prior Learning (RPL) and Credit Transfer (CT).

Recognition of Prior Learning and/or Credit Transfers:

This qualification reflects the role of individuals working in kitchens who use a defined and limited range of food preparation and cookery skills to prepare food and menu items.
They are involved in mainly routine and repetitive tasks and work under direct supervision. This qualification does not meet the requirements for trade recognition as a cook but can provide a pathway towards achieving that.
This qualification provides a pathway to work in kitchen operations in organisations such as restaurants, hotels, catering operations, clubs, pubs, cafes, and coffee shops; and institutions such as aged care facilities, hospitals, prisons, and schools.

VET Delivered to Secondary Schools (VDSS) and Victorian Certificate of Education
This qualification forms part of the credit suite specified by the Victorian Curriculum and Assessment Authority (VCAA) and may contribute towards the satisfactory completion of the Victoria Certificate of Education (VCE) Vocational Major or the Victoria Pathways Certificate (VPC).

VCE VET programs for VM and VPC students:
-
are fully recognised within the Units 1 to 4 structure of the Victorian Certificate of Education (VCE VM) and therefore may contribute towards satisfactory completion of the VCE VM.
-
may contribute to the satisfactory completion of the Victorian Pathways Certificate (VPC)

- function within the National Training Framework.

Fee type definitions

The amount you pay for your course depends on whether you’re offered a government subsidised place or a full fee-paying place.

Students who enrol in a:

  • government subsidised place pay subsidised tuition fees (the government contributes the rest), and may be required to pay a Student Services and Amenities Fee along with any material fees
  • full fee-paying place pay the full fee tuition rate (which includes Student Services and Amenities Fee and any material fees).

Admission & pathways

Meeting the minimum admission requirements does not guarantee you entry into this course. Some courses receive more applications than the number of places available. In this situation we will also assess your education, work and other relevant experience.

Entry requirements

VDSS : The suitability, literacy and numeracy levels of applicants will be assessed through consultation with the relevant secondary school.

VCE Vocational Major (VM):
The suitability, literacy and numeracy levels of applicants will be assessed during the VCE Vocational Major application process with relevant VU teaching staff.Applicants must be 16 years and over at the time of course commencement.
