Overview

Prepare for work in restaurants, catering, cafes and other food-related roles, with the Food Handling Skill Set SITSS00068 at Victoria University.

This skill set is suitable if you handle food in kitchens, small food-preparation areas, or bars in tourism, hospitality or catering.

You will gain hands-on skills and knowledge to prevent food-borne illnesses:

  • identifying and reporting food hazards
  • safe food handling
  • safe preparation and storage of food items
  • service and dispose of food
  • laws and regulations related to food preparation.
  • food safety program procedures.

This skill set is delivered over one (1) day via face-to-face training on campus in a classroom and VenU, Victoria University’s training restaurant open to both staff and general public. The operational training lets you learn and apply your skills in a fully-equipped hospitality training environment.

There is also a facilitator-led eLearning training and assessment component, and you will undertake structured learning activities in your own time. It is useful, but not essential, for you to have basic computer skills to access the eLearning.

Skills First (subsidised) indicative fees

The Skills First government contribution in 2024 towards this course is $53.63. If eligible, you will pay:

Course contents

In order to be issued a Statement of Attainment for the SITSS00068 Food Handling Skill Set, a student must successfully undertake the following unit:

A set of skills to equip individuals for work in food handling to ensure food safety. This skill set is for food handling personnel working in tourism, hospitality and catering organisations with permanent or temporary kitchen premises, and smaller food preparation or bar areas.Certification requirements apply in Victoria to individuals involved in food handling. This relies on the completion of SITXFSA005 Use hygienic practices for food safety. The unit of competency provides the skills and knowledge to prevent contamination of food that might cause food-borne illnesses. The elements of the unit involve following organisational hygiene procedures, identifying and reporting food hazards and any personal health issues. It applies to all organisations with permanent or temporary kitchen premises or smaller food preparation or bar areas.
